Plum Dumplings (Zwetschen Knoedel) Ingredients: Dumpling: 1 kg mealy potatos 2 tablespoons butter 250g flour 2 eggs a dash of salt 1 kg plums Toping: 150 g butter 100 g breadcrumbs 2 tablespoons icing/powdered sugar Dumplings: Peal the potatoes, boil, and mash them while still warm. Still warm, mix with butter, flour, egg and salt. Cut the plums and replace the pit with a sugar cube. Wrap each plum in dough and form a dumpling (ball), be cautious to well cover the whole plum with dough while still not making the dough to thick. Simmer the dumpling for around 10 minutes in salty water, use a skimmer to take them out and let them drip off a little. Toping: Melt butter in a small pan and add breadcrumbs to it. Fry at medium heat until the crumbs are golden-brown. Add sugar, stir once more and remove from heat. The dumplings are dusted with toping and icing sugar before eating. Enjoy!
