Recipes from Ben Reilly. ============ Bran Muffins ============ 1/2 cup brown sugar 4 Tbsp. oil 1 egg 1 cup milk (***Reilly Family Secret: use 1/2 cup for drier, crispier textured muffins***) 1 tsp. vanilla 1 1/2 cups cooking bran 1 cup flour 1/2 tsp. baking soda 1 1/2 tsp. baking powder Cream sugar, oil, egg milk and vanilla. Mix together the dry ingredients. Stir wet and dry ingredients together until moistened. Spoon into greased muffin tins. Bake at 400 degrees for 15-18 minutes Should make 9 muffins. =================== Banana Chip Muffins =================== 1 3/4 cups flour 1/2 cup sugar 3 tsp. baking powder 1/2 tsp. salt 1/2 cup chocolate chips 1 egg 1/4 cup oil 1/4 cup milk 1 cup mashed bananas (usually 3) Measure first five dry ingredients into large bowl. Mix thoroughly and make a well in the centre. Beat egg until frothy. Mix in oil, milk and bananas and pour into the well of the dry ingredients. Stir only to moisten. Batter will be lumpy. Spoon into greased muffin tins. Bake in 400 degree oven for 20-25 minutes. Should make about 9 muffins. ====================== Chocolate Chip Cookies ====================== 1/2 cup brown sugar 1/2 cup white sugar 1/2 cup margarine 1 egg 1 tsp. vanilla 1 Tbsp. milk 1 cup flour 1/2 tsp. baking soda 1/2 tsp baking powder 1/2 tsp. salt 1 cup rolled oats 1 cup chocolate chips Cream together the margarine with the white and brown sugars. Add the egg, vanilla and milk. Beat well. Mix the dry ingredients together and add to the creamed mixture. Fold in the rolled oats and chocolate chips. Drop by tablespoons onto lightly greased cookie sheet. Bake at 350 degrees for 12-15 minutes. DO NOT OVERBAKE.
